Basic Mayonnaise


  • 1 raw egg yolk (free range is provides best results).
  • 1/2 cup avocado oil or light olive oil.
  • 1 Tbs fresh lemon juice.
  • 1tsp water.
  • Pinch of sea salt.


  1. Before you start, make sure all the ingredients are at room temperature.
  2. Put the egg yolks in a food processor or blender. Sprinkle with salt and add water.
  3. Start blending while slowly adding the oil.
  4. After the mayo has thickened, add lemon juice and gently mix with a spoon.
  5. Add flavour enhancer of choice (optional)

**Additional flavour options:

Add a minced clove of garlic to make Aioli

Add Paprika for a tasty egg salad dressing (very yummy mixed with hardboiled eggs and spread on Rice Cakes)
