Beef Pilaf with Rice


• 3 tablespoons of tomato paste
• 1 tsp dried thyme
• 1 garlic clove
• 1 onion
• 2 bay leaves
• 1 tbs tamari/soy sauce
• 1 tbs pure maple syrup
• 1kg beef strips
• 1 cup beef stock/broth
• Roast pumpkin
• Brown or basmati rice
• salt & pepper to taste


Peel and chop pumpkin and roast in a preheated oven until cooked through (approx 25mins).

Start cooking rice;

Once rice and pumpkin are cooking, saute chopped garlic and onion until soft;

Add beef strips and stir until browned;

Add remaining ingredients and simmer for 10-15 minutes;

Serve with mashed roast pumpkin, steamed greens and rice.
