Chicken Cashew Macadamia Pasta Bake


  • 500g chicken breast/thigh fillets
  • 2-3 rasher shortcut bacon
  • 1 box Spelt or Pulse Pasta
  • 2 cups of green beans, trimmed and washed
  • 50g Cashews
  • 50g Macadamias
  • ½ tbs Vegetable Stock Concentrate
  • 250mls water


  1. Preheat oven to 180 degrees.
  2. Line a large baking dish with baking paper.
  3. Cut up chicken and bacon into small pieces.
  4. Add chicken, bacon and beans to baking dish.
  5. To make sauce, add cashews, macadamias, water and vegetable stock to a blender and blend until smooth.
  6. Pour over chicken dish.
  7. Place in oven and bake for 35-45 minutes or until chicken is cooked through.
  8. While chicken is cooking, cook pasta as per instructions.
  9. Remove chicken and stir through pasta.

Makes 4-5 serves.
