Creamy Cashew, Coconut and Lime Sauce


  • 3/4 cup raw cashews
  • 1/2 cup fresh coriander leaves
  • 1 large garlic clove
  • 70mL coconut cream
  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado
  • 1/2 teaspoon fine sea salt


  1. Add the cashews to food processor. Blitz until they begin to form butter.
  2. Add coriander and garlic clove to food processor. Blitz to chop and combine.
  3. Add avocado, lime juice, salt and coconut cream and blend together until well combined
  4. Add small amounts of water to get desired consistency.
