So you came to my 2nd birthday celebrations and LOVED the delicious food?

Below you will find ALL the information so you can enjoy it over and over again (in moderation of course!)

From left to right: Fruit platter, Bliss Balls (nut free, raspberry, macadamia & hazelnut, lemon coconut – recipes below), Yoghurt bar (Vanilla Greek: Tamar Valley Vanilla, Coconut Yoghurt: Nudie Original, Strawberry: Dairy Farmer’s), Muesli (Carman’s Fruit Free & Gluten Free mix), Paleo Tea Cakes

 

BLISS BALLS

Nut Free:

  • 1 cup desiccated coconut
  • 1 cup rolled oats
  • 1/2 cup raw cacao powder
  • 16 medjool dates, pitted
  • 1 tbs chia seeds
  • 1 tbs sunflower seeds
  • 1 tbs buckwheat kernals
  • 1 tbs tahini
  • 1 tbs pure maple syrup

Combine all ingredients in a high powered food processor and blend until combined.  Roll in additional coconut.  Place in the fridge to set. Makes 18.
Hazelnut, Almond & Macadamia:

  • 1 cup raw macadamias
  • 1 cup raw hazelnuts
  • 1/2 cup raw almonds
  • 1/2 cup desiccated coconut
  • 1/2 cup raw cacao powder
  • 16 medjool dates, pitted

Combine all ingredients in a high powered food processor and blend until combined. Place in the fridge to set. Makes 20.

Raspberry Bliss Balls:

  • 1 cup frozen raspberries
  • 10 medjool dates, seeds removed
  • 1 cup raw cashews
  • 2 cups desiccated coconut
  • 1 teaspoon vanilla extract
  • pinch of salt
  1. Place the ingredients into your food processor and pulse at high speed until the mixture is broken down, well combined and sticking together. Use your hands to shape the mixture into balls.
  2. Either leave the balls as they are or roll in coconut or cacao or cocoa or drizzle with melted dark chocolate. Place in the fridge to set.
  3. Eat and enjoy.

Lemon & Coconut Bliss Balls:

  • 1.5 cups of cashews
  • 1.5 cup of desiccated coconut
  • 1 lemon, zested and juiced
  • 1/4 cup rice malt syrup
  • 2 tbs coconut oil, soft
  • 1 tsp vanilla essence
  • a pinch of rock salt
  1. Add the cashews to food processor and quickly blitz them up until they are closer to the texture of tiny rocks.
  2. Add the remainder of the ingredients and blitz until the dough has come together.  Do not overmix as the cashews will turn into butter.
  3. Roll into balls and coat in more desiccated coconut.
  4. Place in fridge to set. Makes 20.
