Oven Baked Butter Chicken


  • 3-4 garlic cloves
  • 3cm fresh ginger, peeled
  • 1 brown onion
  • 100g coconut oil
  • 1/2 tsp cinnamon
  • 2 tsp paprika
  • 3 tsp garam masala
  • 1 tsp ground cardamom
  • 2 tsp ground coriander
  • 2 tsp cumin
  • 2 tsp turmeric
  • 400ml coconut cream
  • 2 tbs lemon juice
  • 200g tomato pase
  • sea salt to taste
  • 1-1.5kg diced chicken


Preheat oven to 180 degrees.

Add garlic, onion and ginger to a food processor, and finely chop.  Add remaining ingredients (except chicken) and blend to combine.

Add diced chicken to sauce mix and stir.

Pour into a large lined baking dish.

Bake in oven for 30-4ominutes until chicken is cooked through.

Serve with cooked brown rice and greens.
