TURKEY MINCE WITH BROWN RICE & CASHEW SAUCE
Ingredients
- 2kgs Turkey Mince
- 1 400g can of crushed tomatoes
- 1 tablespoon Tamari sauce
- 1 teaspoon tumeric powder
- 1 teaspoon paprika
- 1 chopped onion
- 1 chopped carrot
- 1 chopped zucchini
- Diced pumpkin
- 300g brown rice
- 100g spinach
Method
- Prepare rice and begin cooking using your chosen method (rice cooker, stove top, thermomix)
- Heat macadamia oil in frypan and saute onion until softened.
- Add mince and stir until browned.
- Add carrot, zucchini, pumpkin, tamari, paprika and tumeric and stir for a few minutes.
- Add chopped tomatoes and reduce to simmer for 15 minutes, or until rice is cooked.
- Once rice has cooked, add to frypan, along with spinach and stir to combine.
- Prepare cashew sauce by placing 500g water, 1 tablespoon of vegetable stock (or free range liquid stock) and 100g cashews and blend in a food processor or thermomix on high speed for 1 minute until smooth.
- Serve and drizzle with cashew sauce.
