{RECIPE} MY GO-TO LUNCH

 

TURKEY MINCE WITH BROWN RICE & CASHEW SAUCE

Ingredients

  • 2kgs Turkey Mince
  • 1 400g can of crushed tomatoes
  • 1 tablespoon Tamari sauce
  • 1 teaspoon tumeric powder
  • 1 teaspoon paprika
  • 1 chopped onion
  • 1 chopped carrot
  • 1 chopped zucchini
  • Diced pumpkin
  • 300g brown rice
  • 100g spinach

Method

  1. Prepare rice and begin cooking using your chosen method (rice cooker, stove top, thermomix)
  2. Heat macadamia oil in frypan and saute onion until softened.
  3. Add mince and stir until browned.
  4. Add carrot, zucchini, pumpkin, tamari, paprika and tumeric and stir for a few minutes.
  5. Add chopped tomatoes and reduce to simmer for 15 minutes, or until rice is cooked.
  6. Once rice has cooked, add to frypan, along with spinach and stir to combine.
  7. Prepare cashew sauce by placing 500g water, 1 tablespoon of vegetable stock (or free range liquid stock) and 100g cashews and blend in a food processor or thermomix on high speed for 1 minute until smooth.
  8. Serve and drizzle with cashew sauce.
