Tomato, Capsicum & Cashew Dip


  • 2 garlic cloves
  • 100g semi dried mediterranean herb tomatoes
  • 1/2 red capsicum, deseeded
  • 120g unsalted cashews
  • 20g extra virgin olive oil
  • 2 tsp white vinegar
  • 20g nutritional yeast flakes (or parmesan cheese for dairy option)


Add all ingredients to a blender and pulse 4-5 times until an even consistency is achieved.

Based on 6 serves (66g per serve)
